Pork Tenderloin With Sweet Potato


Preheat oven to 400. While it's preheating, prepare the veg.

  • 4 or 5 Sweet Potatoes (2 lbs)
  • 1 Head Garlic
  • Olive Oil
  • Salt

Wash, remove gross bits and poke holes in the sweet potatoes. Wrap in foil. Cut the top off the garlic head; drizzle with oil and sprinkle with salt. Wrap in foil. When the oven is heated up, put them all in the oven on a tray leaving room for another dish of meat. Bake for

35 minutes at 400

and while that is happening, prepare the meat.
  • 2 Pork Tenderloins
  • Olive Oil

Remove excess fat and silver skin from the tenderloins, then poke holes in them. Brush or rub on some olive oil, then in a small bowl combine
  • 1 tsp Salt
  • 1 tsp Italian Seasoning
  • 1 tsp Garlic Powder
  • 1 tsp Coriander
  • 1/2 tsp Pepper

and rub the mixture into the meat. Fry the tenderloins on all sides until lightly brown, 6 minutes or so. Put them in their own glass baking pan with a meat probe. When the first 35 minute timer goes off, remove the garlic from the oven and place somewhere to stay cozy. Put the glass baking dish of meat into the oven beside the sweet potatoes. Time another

35 minutes at 400

While you're waiting, deglaze the frying pan with some chicken stock or white wine. Somewhere in your 35 minutes, the meat and the potatoes will be done, not likely at the same time. The meat should read 150 or 160. When it reaches that temperature, remove it to a serving tray, tent with foil and keep cozy. Then deglaze the now empty meat pan with the deglazing juices from the frying pan. Keep warm until serving.

The potatoes are done when they become squishy. When that happens, remove from oven and put somewhere to cool down sufficient for handling. When they are cool enough for handling, remove foil, remove skin, and then into a bowl with the garlic cloves which should squish right out of their skins. Mash gently with a fork, then add
  • Milk
  • Butter
  • Salt
  • Pepper

to taste and to make a proper consistency. When everything is done and the meat has rested a bit, slice up the pork, drizzle with pan juices, add a side of sweet potato and serve.
